This is the fruit of the pepper plant, a wild or cultivated climbing vine that flourishes in the tropics. It is picked, as its name suggests, before full maturity, when the corns are still green and tender. The green peppercorn has a mild, slightly fruity flavor and is not as spicy as the black of white pepper.
